Steamed Tilapia and Fresh Veggies!

-I go to the market every week and usually only buy from their sale items. Plus, I also have their membership card which was free. Every week I save anywhere from $25-40 just for buying certain items! Anyhow, at this grocery store they have daily fish specials. I bought some Tilapia this past week and it was only $2.99!!! There was enough of it to feed us two dinners.

Season up your fish, usually I use cajon type of seasonings. You can either choose to let it marinate or just rub it in. Take two long pieces of foil, throw one piece on each. Take some fresh veggies (I just buy whats on sale that week) such as, asparagas, bell peppers, broccoli or summer squash. Rinse them off and chop into bite size pieces. Throw the veggies on top of the fish in the foil and fold up into a little boat. I then add just a touch of lemon juice to each and throw a little garlic powder on top. Last, just seal up the foil boats and place them straight on the oven rack for 30-40 minutes (350 degrees!) Easy as that, pull it out and you got a healthy, flavorful, and delicious meal!!!!

P.S.- Anyone have any secrets to obtain more energy!?! I am dying here, I feel like I need to sleep all day?!?!?!
